Tinuom Festival – Honoring a Special Chicken Dish

The Tinuom Festival is a celebration of the town’s history and its popularly craved delicacy, tinuom made of native chicken souped with spices – tomatoes, onions, garlic, ginger, and lemon grass and wrapped in banana leaves. This festival is one of the highlights of the 10-day fiesta celebration of the municipality and is a colorful explosion of music and dances. There are competing groups (called tribes or “tribu” in the local dialect) composed of students from six secondary schools in Cabatuan.

Currently, when one talks about tinuom, he means chicken cooked the tinuom way. So much so that people from other places thought tinuom nga manok is the specialty of the people of Cabatuan. But I beg to disagree. I grew up in Cabatuan, and I haven’t heard anyone cooking the tinuom way as part of their daily life. One time our Owaw cooked tinuom for us. And it was tinuom nga isda. Or tinuom nga uhong (mushroom). She cooked tinuom because we were in the far away farm of my father where it was hard to buy lard or cooking oil.

Last I heard, tinuom was just a specialty of one carinderia in Cabatuan. While the other carinderias serve batsoy, linaga, arroz caldo, or pata. Tinu-om Festival is celebrated in Cabatuan, Iloilo, every September 1-5.  Savor the delights offered by Cabatuan’s Tinu-om— a local soup that has rapidly gained popularity. Using native chicken as its principal ingredient, customers come in groups gathering earlier than mealtime to take pleasure in tasting the dish. Delectable servings of this local cuisine is matched with a myriad of special events such as cooking demonstrations, other culinary delights and the newly-formatted street dancing competition.
